    Seoul has been the capital of Korea for about 600 years, since the time of the Joseon Dynasty(1392-1910). Seoul was referred to as “Han Yang” during the Joseon Dynasty, but after the liberation from Japan, in 1945, the newly founded Republic of Korea officially changed its capital city’s name to Seoul. Seoul has developed into a bustling metropolis, acting as the hub for political, economic, social, and cultural matters. The Han River runs through the heart of the city.     Seoul cuisine is renowned for its elegance and variety. Seoul, Gaeseong, and Jeonju are the three top cities in Korea known for their exquisite cuisine. Being the capital of the country for over 500 years since the early Joseon dynasty, the cooking style of the dynasty still remains on cusines of Seoul.

    The top 5 foods in Seoul:
    An essential pleasure of traveling overseas is the opportunity to sample the native cuisine of different countries- so what are some of the best dishes to enjoy while traveling in Korea? The following is a list of the top 5 foods selected by tourists.
    ■ Number 1: Hearty chunks of meat, Galbi 갈비
    Galbi, meaning ‘rib’ in Korean, is a dish featuring beef or pork ribs cut into 6~7cm chunks, then served broiled or grilled. There are two types of galbi- ‘yangnyeom galbi’, which is marinated before it is cooked, and ‘saeng galbi’, which is grilled without any seasoning. Suwon City’s Suwon galbi is famous for its tastiness. 
    ■ Number 2: The savory taste of seasonings, Bulgogi 불고기
    Bulgogi is a dish with thinly sliced beef or pork marinated in soy sauce, green onions, garlic, sesame, and sesame oil, served grilled. 
    ■ Number 3: Full of nutrition, Bibimbap 비빔밥
    Bibimbap is a dish with minced meat, veggies, eggs, sesame oil, and hot bean paste mixed with rice. The ingredients are varied by region, with consideration to the aesthetics of the colors in the dish and its nutritious value. Jeonju City’s Jeonju bibimbap is especially popular. 
    ■ Number 4: A sizzling mix, Dolsot Bibimbap 돌솥비빔밥
    Dolsot bibimbap is a variation of the bibimbap (minced meat, veggies, eggs, sesame oil, and hot bean paste mixed with rice) served in a heated stone pot. The stone pot works to retain the heat inside the dish while it is being eaten. The pots are hot enough to sizzle while the bibimbap is being mixed! 
    ■ Number 5: Tasty on the inside, Mandu 만두
    Mandu is a Korean-style dumpling with minced meat, tofu, kimchi, and vegetables wrapped in a thin flour skin. The mandu is named differently according to cooking method- ‘jjinmandu’ (steamed), ‘gunmandy’ (fried), or ‘mulmandu’ (boiled). The mandu is also referred to by the main ingredient on the insides- meat mandu, kimchi mandu, and vegetable mandu are the most common variations.
